Ingredients - 10 quail eggs, 2 pounds potatoes, 1 ear of corn, 3 tablespoons butter, 1 yellow bell pepper, 1 red bell pepper, 1 medium white onion, 2 shallots, 1 pound shrimp, 1/8 teaspoon ground red pepper, 1 tablespoon chopped fresh parsley and chives. Plus 1/4 cup heavy cream. Salt and pepper to taste. Directions - In a large pot of salted water bring to a boil. Cook potatoes until tender about 8 to 10 minutes. Drain the potatoes and slice. Cook corn and cut kernels of ear. In a large saute pan cook onions, peppers and shallots. Add potatoes, shrimp, corn, herbs, cream, ground red pepper, salt and pepper. Reduce heat to low and simmer Stirring occasionally until potatoes are tender and shrimp is cooked. In a saute pan, cook quail eggs in butter sunny-side up until firm. Loosely mound home fries in center of plate. Top with fried quail eggs.
